This overnight oatmeal is super simple and super tasty, if you like peanut butter and bananas, like Elvis! This is a great dish to make the night before, when you know you will have a busy morning and a busy day, but you need some good energy and good vibes. It also is a great way to get some fiber after the holidays (too much mashed potatoes and gravy?) and an excellent way to use up ripe bananas!

Ingredients:
16 oz vanilla Greek yogurt
1 1/3 cups regular oats
1 1/3 cups milk
2 small ripe bananas, mashed (tip: you can use frozen bananas – I often freeze my ripe bananas to use in this recipe, banana muffins or banana loaf)
2 Tbsp chia
¼ cup honey (melted)
½ cup peanut butter (warmed)
Banana chips
Optional: crumbled crispy bacon
Directions:

In small bowl, heat the honey and peanut butter in the microwave (for 15 – 20 seconds). You want it warm, not hot.
In medium bowl, mash the banana.

Then add in the peanut butter and honey to combine. Add in the chia and oatmeal; mix. Then add in the milk. Mix well. Finally add in the yogurt. Mix until well combined.
Scoop into four mason jars or large clear glasses/mugs. Cover and let sit overnight.
In the morning garnish with a dollop of Greek yogurt or whipping cream. Add extra banana slices or dried banana chips and/or crumbled crispy bacon.
